My approach to cooking is one of deep respect. For it is not only an art form which can bring great joy to the consumer, it is the only type of art that we require for sustenance. In that regard, cooking is not only about excellent flavor, presentation and sustainability although these are essential. It is also innately about the understanding that the food being produced is maintaining life. In many respects, it is sacred.
I have been cooking for 11 years professionally, and am a graduate of the Culinary Institute of America, as well as an alumni of the Waldorf Astoria, the Yale Club, and Red Rooster Harlem.
