Hi my name is Richie Farina and I am the former executive chef of Moto, I have over 20 years cooking experience and I currently work at Monteverde in the west loop .
My idea with this menu is to let great summer produce shine and use my many techniques I know to enhance their flavors.
The pasta dough recipe is one that I have used for over 10 years and works great for tortellini.
